Iron Age Pigs originally were a cross between a pedigree Tamworth sow and a Eurasian Wild Boar. This type of pig, first developed nearly 50 years ago, represents what early domesticated pigs might have looked and tasted like 4,000 years ago.
We're being supplied the pigs by our friends at Lyons Hill Farm. They roam free in a large area of fenced woodland, living on a natural diet for over 10 months, twice as long as a commercial breed.
The meat is dark and full flavoured, like that of a wild boar, but with the fat content of a Tamworth, making them prized by chefs.
These sausages are made simply, with a corse grind, no rusk and 2 types of sage. So good on the barbecue or as a breakfast sausage.
