Left to graze after being retired from dairy production, these cows have fattened up and built layer upon layer of deep beefy flavour. Darker meat, loose grained texture and heavy marbling are all characteristics of our British Ex-Dairy beef. We then dry age the beef, on the bone increasing tenderness, reducing moisture and maximising flavour.
